Fiona Stanley Hospital (FSH) is a 900-bed tertiary hospital offering a range of health services including the State Rehabilitation Service, a comprehensive cancer centre, purpose-built mental health unit, maternity, paediatric and neonatal services, and the State Adult Burns Service. FSH also delivers specialised services such as heart and lung transplantations and hyperbaric medicine. The service runs on a fresh cook and chill food model delivering  approximately 72,000 meals per month using regenerative food systems to meet diverse dietary requirements, strict allergen controls, and IDDSI-compliant texture-modified standards.

SMHS delivers quality, safe and effective hospital and health services within a catchment area stretching more than 3300 square kilometres across the southern half of Perth.

We are currently seeking a Supervisor Food Services (Head Chef) to join our team.

The successful applicant will lead the day-to-day operations of Fiona Stanley Hospital's production kitchen, ensuring the delivery of a high-quality, safe and efficient food service to our patients. This is a key operational leadership role responsible for coordinating food production activities, supervising a team of chefs and support staff, and maintaining the highest standards of food quality, presentation, food safety and regulatory compliance.

As the culinary leader within the production kitchen, you will oversee large-scale meal production, menu implementation, plating standards, stock control, food waste minimisation and procurement processes. You will play a critical role in ensuring all patient meals meet diverse dietary, allergen management and texture-modified requirements in collaboration with Dietitians, Speech Pathologists and Food Service stakeholders.

The role is responsible for leading and maintaining compliance with food safety systems, including HACCP principles, FSANZ Food Standards Code requirements, infection prevention protocols, quality audits and continuous improvement initiatives. You will provide technical leadership, coaching and training to chefs and catering staff while fostering a culture of safety, quality and operational excellence.

We are seeking an experienced Chef Supervisor, Head Chef or Catering Operations professional who has demonstrated success leading teams within a large-scale catering, hospitality, healthcare, aged care or institutional food service environment. You will bring strong leadership capabilities, sound commercial and kitchen management skills, and a commitment to delivering exceptional food services in a highly regulated environment.
